Tuesday, January 15, 2008 Another restful day...

I was supposed to go to the beauty parlor today to get a much-needed perm. Why I always wait until I can stand it no more, is beyond me. I couldn't get an appointment last Friday because she was busy and today was the first available time. This morning she called and said she had a couple of her helpers out sick and needed to reschedule for tomorrow.

We are supposed to have bad weather coming in tomorrow afternoon/evening but we should be through by the time my beauty appointment is due at 12:00 noon.

Anyway, it has been a quiet day today because we've stayed in again for the most part. Didn't even get out to walk. Granddaddy did get out to go mail the taxes and get some chicken noodle soup for his tummy. It was pretty tasty to me, also, but I had already cooked up a few vegetables yesterday so we could come in and have fairly fast lunches with our roast beef I cooked. I'm trying to see if I can't eat at least some better so that I can feel lots better this year.

I bought a huge rutabaga at the grocery store and cooked it in my pressure cooker. Those things are so tough to prepare I don't do them as often as I should I guess, but the pressure cooker makes them so much easier to prepare and I love them occasionally. It takes anywhere from 3-5 minutes and let cool naturally unless you're pressed for time. The larger the chunks they are cut in the longer it takes to cook them.

I love messing with the cashiers in the grocery lines. They very seldom know what a rutabaga is and almost always have to ask, "What is this?" And, you have to spell the name because they can't look it up on their little chart if you don't. Of course the younger generation is guilty mostly, but I have had some older ones who didn't know what it was, either.

Little Princesses' mommy called and said she had tried out the following recipe from the Kraft magazine this month called Almond Chicken Dijon and she gave it a thumbs up as being great, easy, tasty. May have to try it. She uses the flash frozen chicken breasts from Sams which makes it easy to have chicken on hand.

Almond Chicken Dijon
Prep Time:10 min
Total Time:35 min
Makes:4 servings
4 small boneless skinless chicken breast halves (1 lb.)
2 Tbsp. KRAFT Mayo Light Mayonnaise
2 Tbsp. GREY POUPON Dijon Mustard
1/4 cup PLANTERS Slivered Almonds, coarsely chopped
PREHEAT oven to 375°F. Place chicken in lightly greased 13x9-inch baking dish; set aside.
MIX mayo and mustard until well blended. Spread top side of each chicken breast half with 1 Tbsp. of the mayo mixture; sprinkle evenly with almonds.
BAKE 20 to 25 min. or until chicken is cooked through (165°F).

Little Princesses' mother said Little Princess has been standing on the cat scratch post. She told her she couldn't climb up and stand on it, so she closed the door to keep her mother from seeing her. She is going through that stage of "no" means I can do it. She certainly hasn't heard the word enough to automatically defy her. She knows exactly what it means, too. No makes it all better, doesn't it, Little Princess. You love a challenge, whether it's doing something you shouldn't be doing or just because she said, "No."
